About this adventure
Hearth cooks at the President James K. Polk State Historic Site spend the day turning cuts of hog meat into dishes that late-18th-century backcountry families would have served, when butchering took place in late fall and early winter. Using period methods they make sausage from scratch, prepare pickled pigs' feet and cook a pork roast with sauerkraut. Visitors can watch and ask questions; tasting is not allowed, but as the site puts it, the smells are free. Open to all ages from 10 a.m. to 2 p.m.
